INGREDIENTS , (PORTIONS for 1)

  • 1 package of Gnocchi Stuffed Ham Mozzarella Giovanni Rana
  • 15 gr butter
  • 1 firm figs
  • 30 gr from pecorino
  • Acacia honey
  • Salt
  • Pepper

START COOKING

  1. Wash and dry the figs, cut them in four and brown them in a pan with 30 g of butter until they are lightly golden.
  2. Cut the pecorino into large pieces.
  3. Melt a knob of butter or heat a spoon of extra virgin olive oil in a non-stick pan.
  4. Pour the gnocchi and cook over medium heat, stirring regularly. Cook for 5 minutes, until you get golden brown gnocchi.
  5. Once cooked, make skewers with the gnocchi, the grilled fig wedges and the pecorino cheese.

Spinach and White Bean Pecorino Soup

INGREDIENTS

  • Extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 small onion,  cut into 1/4-inch dice
  • 1 carrot, cut into 1/4-inch dice
  • Kosher salt
  • Black pepper
  • 1 cup dry white wine, such as Sauvignon Blanc
  • 32 ounce low-sodium vegetable stock or chicken stock
  • 1 (15 ounce) can cannellini beans, well rinsed and drained
  • 1 cup thinly sliced zucchini, cut into half moons
  • 2 cups peas, preferably fresh or frozen and thawed
  • 3 cups baby spinach, washed and dried
  • 1 cup freshly grated Pecorino-Romano, plus extra for garnish

DIRECTIONS

    1. In a large pot over medium heat drizzle 1 tablespoon olive oil; sauté garlic and onion until softened, about 2 to 3 minutes. Add in carrots, 1 teaspoon salt and 1/2 teaspoon black pepper, stir with a wooden spoon until carrots are tender. Add white wine and stock, bring to a boil and simmer for 5 to 8 minutes. Mix in cannellini beans and zucchini; simmer until vegetables are tender, 5 minutes.
    2. Just before serving add peas, fresh spinach, and Pecorino-Romano. Stir until warmed through and spinach is wilted.
    3. Serve in soup bowls and garnish with grated Pecorino Romano and cracked black pepper.

    APPLE PEAR SALAD WITH HONEY CILANTRO VINAIGRETTE

    INGREDIENTS

    FOR THE VINAIGRETTE

        • 1/4 cup olive oil
        • 2 tbsp honey
        • 2/3 cup packed cilantro
        • Juice of 1 lime
        • Pinch of salt

    FOR THE SALAD

        • 4 cups baby kale
        • 1/2 pear, thinly sliced
        • 1/2 red apple, thinly sliced
        • 1/4 cup dried cranberries
        • 1/4 cup chopped walnuts
        • Shaved Manchego cheese, as much as desired

    INSTRUCTIONS

    FOR THE VINAIGRETTE

        • Add all ingredients ingredients into a blender and pulse until the cilantro is finely chopped. Refrigerate until ready to use.

    FOR THE SALAD

        • Add all ingredients except shaved Manchego cheese to a large bowl. Pour dressing over top and toss to evenly coat. Serve immediately.
        • Top each salad bowl with as much shaved Manchego cheese as desired and enjoy!
